Country Style Chicken Sausage with Poached Eggs, Tomato & Arugula

Country Style Chicken Sausage with Poached Eggs, Tomato & Arugula

Ingredients

  • 4 al fresco Country Style Fully Cooked Breakfast Chicken Patty
  • 2 tablespoon whipped cream cheese
  • 1/4 cup plain greek yogurt
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon chopped dill weed
  • 1 1/2 teaspoon dijon mustard
  • 1 teaspoon water
  • olive oil cooking spray
  • 1/2 teaspoon white distilled vinegar
  • 4 large eggs
  • 4 whole wheat toasted english muffins
  • 4 slices cheddar cheese
  • 4 slices tomatoes
  • 2 ounces arugula

Directions

  1. Whisk the cream cheese and yogurt together in a small bowl and then blend in the lemon juice, dill, mustard and water. Set aside.
  2. Place a non-stick skillet over medium-low heat coated with cooking spray. Heat patties for 2 1/2 minutes, turn over, add 1 tbsp of water and cover, heat for an additional 2 1/2 minutes.
  3. To poach the eggs, fill a deep skillet with 2 inches of water, add vinegar, and bring to simmer over medium heat.
  4. Crack each egg into separate custard cups. Gently slide 1 egg at a time into simmering water in skillet. Cook just until egg whites are set, about 3 minute (yolks will be only partially cooked).
  5. To assemble, place 1/2 of the toasted English muffin on each plate. Top each with a chicken patty. Use a slotted spoon and carefully transfer 1 egg and on top of each patty, followed by the cheese slice, tomato slice and arugula.
  6. Ladle the herb cream sauce over the top, and place the remaining half of the English muffin on the side. Serve immediately.
