Sweet and Savory Breakfast Burrito

Ingredients

  • 7 al fresco Apple Maple Fully Cooked Breakfast Chicken Sausage
  • 4 large eggs
  • 1/4 cup 2% milk
  • 1/2 cup shredded cheddar cheese
  • 4 flour tortillas
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 mango, cut into cubes
  • 1 garlic cloves, minced
  • 1/2 jalapeno pepper, diced
  • 1/2 teaspoon chopped shallots
  • 2 tablespoon cilantro
  • 2 tablespoon lemon juice

Instructions

  1. Whisk eggs, milk and salt and pepper together until frothy for fluffy eggs. Cut apple sausage into small pieces and saute in cast iron skillet until browned.
  2. Add the egg mixture, cook until almost done, add 1/2 cup of cheddar and let it melt.
  3. Warm tortillas on grill directly or in a cast iron pan.
  4. Fill tortillas with egg and sausage mixture and roll into burrito shape.
  5. Mix the mango, garlic, jalapeno, shallots, cilantro and lemon juice together. (Use as a dip or topping for burritos, fish or chicken.) Garnish tortillas with the Mango Salsa and enjoy!
