Vietnamese Style Spicy Chicken Sausage Spring Roll

Vietnamese Style Spicy Chicken Sausage Spring Roll using al fresco Spicy Jalapeno Fully Cooked Chicken Sausage, with carrots, daikon radishes, cucumber, cilantro, rolled into a spring roll, recipe, foodservice application.

Vietnamese Style Spicy Chicken Sausage Spring Roll

Ingredients

  • 4 al fresco Jalapeno Chicken Sausage
  • 1/4 cup rice vinegar
  • 1 1/2 teaspoon sugar
  • 1 pinch salt
  • 1 cup carrots, grated
  • 1/2 cup daikon radish, grated
  • 1 cucumber peeled, sliced into strips
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 1 1/2 teaspoon sriracha sauce
  • 8 8'' spring roll skins

Directions

  1. Whisk together rice vinegar, sugar and salt in medium bowl. Add carrots and daikon tossing to mix. Refrigerate until serving.
  2. Whisk together mayonnaise and Sriracha in small bowl. Chill.
  3. Preheat grill pan (or grill) to medium-hot. Grill sausage links until heated through, then slice into strips 4 - 6" long.
  4. To assemble, dip spring roll skin into luke warm water then let dry. Place cucumber slices on one side of roll and an equal portion of the pickled vegetables, add a grilled sausage slices, cilantro and drizzle with the Sriracha mayonnaise. Roll (like a taco) and serve immediately. Garnish with sprigs of fresh cilantro.

Chef's Notes

Substitute herb flavored flat bread or French rolls for the spring roll skins. The salad filling and dressing can be made a day in advance. For best results, fill and roll spring rolls just before serving.
