Country Style Breakfast Bake with Swiss Chard

Country Style Breakfast Bake with Swiss Chard

Ingredients

  • 4 al fresco Country Style Fully Cooked Breakfast Chicken Patty
  • 1 russet potato
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup chopped shallots
  • 1 finely minced garlic clove
  • 3 cups chopped swiss chard
  • 1 cup baby spinach
  • 1/2 cup grated parmesan cheese
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon ground black pepper
  • 4 large eggs
  • 2 tablespoon water
  • 1 teaspoon pepper sauce
  • extra virgin olive oil spray

Directions

  1. Preheat oven to 350°f
  2. Bake the potato in a microwave 7 - 10 minutes or until tender. Allow to cool, peel, dice 1/4".
  3. Meanwhile, heat a small sauté pan coated with olive oil, sauté the shallots and garlic over medium heat 2 - 3 minutes.
  4. Add the Swiss Chard and spinach, cover and sweat 1 - 2 minutes. Add ¼ cup of Parmesan cheese, remove from burner, season with ¼ tsp black pepper and ½ tsp Jalapeno Tabasco.
  5. In a small bowl, whisk the eggs and water. In a separate bowl mix the ricotta with 1/4 tsp each black pepper, 3 tbsp of the egg mixture, and 1/2 tsp Jalapeno Tabasco.
  6. Coat 4 ea. 10 oz Pyrex baking bowls with cooking spray. Layer the bottom with the diced potatoes. Top with a dollop of the ricotta mixture, a heaping tbsp of the Swiss chard mix, followed by the chicken patties. Divide the remaining ricotta mixture on top of each patty, and finish with the Swiss Chard. Sprinkle with Parmesan Cheese. Pour the egg mix around the inside of each dish.
  7. Bake in a water bath for 20 - 25 minutes or until the eggs are set.
  8. Remove from oven and allow to set for 10 minutes. To remove from the baking dish, run a knife around the edge, place a plate over and invert. Tap gently to release. Invert onto another plate to serve face up. Tip - This can be made the day before, remove from the dish according to instructions above. Heat in microwave for 3-4 minutes. Serve immediately.
