Summer Sizzle Salad with Grilled Sweet Apple Chicken Sausage

Ingredients

  • 4 al fresco Sweet Apple Chicken Sausage, sliced
  • 4 tablespoons olive oil
  • 1 tablespoon shallots, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 1/2 teaspoon fresh thyme
  • 3 tablespoons apple cider vinegar
  • 1 granny smith apple, sliced
  • 1 red apple, sliced
  • 8 leaves romaine lettuce
  • 1/2 cup pecans
  • 1 corn cob
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 2 ounces gorgonzola cheese, crumbled

Instructions

  1. To Make the Dressing:
  2. Saute shallots, salt & pepper in 1 tablespoon olive oil for 5 minutes. Transfer to medium bowl.
  3. Add mustard, honey, fresh thyme, apple cider vinegar and remaining olive oil. Whisk until well combined; set aside.
  4. To Assemble the Salad:
