Spicy Artisan Sausage Banh Mi Sandwich

Spicy Artisan Sausage Banh Mi Sandwich

Ingredients

  • 4 Kayem Artisan 4-Pepper Hot Sausage, sliced
  • 2 10" french baguettes cut in half lengthwise and widthwise
  • 4 tablespoon mayonnaise
  • 1 fresh cucumber sliced into 8 thin pieces
  • 8 sprigs of cilantro
  • 2 tablespoons sriracha
  • 4 serving pickled carrots and daikons

Instructions

  1. Make the slaw: Bring vinegar, sugar, and water to a boil in a small saucepan over high heat; transfer to a medium bowl. Stir in carrots, daikon. Set the slaw aside for 30 minutes. Drain.
  2. Meanwhile, pan grill the sausages slices on medium-high heat 5 - 6 minutes per side and nicely browned on all sides. Pre-heat broiler.
  3. Place baguettes on a baking sheet, open up and spread mayonnaise inside halves. Broil till lightly browned and crispy on the edges.
  4. To assemble: Place a slice of the cucumber on each open face side of the crispy baguette. Place 2 pieces of grilled sausage halves in the sandwich. Evenly divide the slaw on top of the sausages, lightly drizzle with the Sriracha. Finish each with 2 sprigs of cilantro. Once assembled, you may need to use long tooth picks at the base to hold together. Serve immediately. Optional - Serve with low sodium soy sauce on the side, and thin slices of fresh jalpeno pepper.
